The smell of lavender makes me close my eyes and dream that I am somewhere like here:

I do have some rather big lavender bushes in my small garden (as the nun told the sailor) and I have been wanting to make something of them. Seems a waste to let all that deliciousness just wither away. So I decided to experiment with making lavender syrup.

You need:

A handful of lavender flowers (picked off them stems) and some of the leaves
1 vanilla pod, split it down the middle and carve all the seeds out comme d’habitude
1 cup of water
1 1/2 cup of sugar
zest and juice from 2 organic lemons

To make:

Put everything into a pan and bring to a boil until it thickens slightly. Then sift and discard all the pulp. Keep the vanilla pods, though. Pour into sterilized bottle.

Pour over ice cream, cakes, mix with vodka and ginger ale over ice etc.
