If you are like most people, you need three things in December: vitamins, color and delicious food. (Actually, if you were like most people, you wouldn’t be reading this. Sigh!)

Setting off a regular firework of orange, purple and green, this salad is is an orgy of vitamins and flavour. It takes some chopping – but you won’t regret it!

 You need: (serves 8 )

  • ½ head of red cabbage (or one small one), super-finely chopped
  • 3 big handfuls of rinsed kale, superfinely chopped
  • 3-4 big peeled and shredded carrots
  • 2 peeled and cubed oranges
  • 2 peeled and cubed apples
  • a big ole handful of raisins
  • a big ole handful of walnuts
  • Bacon until you are ashamed.

Dressing:

  • Juice from 2 oranges or 4 clementines
  • ½ cup olive oil
  • 2 teaspoons liquid duck stock concentrate (yes, it sounds weird, but trust me on this.)
  • 3 tea spoons gel or seed-free jam (Quince gel s wonderful for this but apple or current gel will also do the trick! Hell, use strawberry jam if that’s all you’ve got.)
  • Freshly ground pepper if you like

 

 

 

 

 

 

 

 

To make:

Mix everything.

Fry the bacon until crispy and put on paper towel. Crumble over.

Make the dressing, taste if it needs more of anything.

Unlike most other salads, where you want to wait until the last minute to dress it, this will only be better if it sits in the dressing – the vegetables are very coarse and will not wilt like green lettuces.

Enjoy as is or eat with duck, roast pork or turkey.

Also works wonderfully next day as lunch. Hell, I had some this morning with a fried egg.
