Here’s an easy and delicious salad:

  • Watermelon in mouth size pieces
  • Feta cheese
  • Sunflower seeds, roasted lightly in a pan with a dollop of honey
  • Rucket leaves
  • Balsamic glaze (storebought – it is too much work to make it your self and it stinks up the house!)

 

Sunflower seeds are cheap and when roasted they get that lovely nutty flavor.

 

 

 

 


Ta-daaa.

The sweetness from the melon and the balsamic glaze is balanced with the fatiness and saltiness from the feta – so no need to add extra salt. I didn’t even use oil to dress this with.
