I just ate this for dinner and it was delicious!

I thought I’d share:

You need:

  • Olive oil
  • Half a head of pointy cabbage
  • 1 zucchini and as many zucchini flowers as you can get your greedy little hands on
  • 1/2 cup cashew nuts
  • 2 cloves garlic
  • Oyster sauce, about 1/2 cup
  • Fresh cilantro

To make:

Start on a dry pan: roast the cashews gently and put them to a side.

Roast the minced garlic in the oil and then add the chopped-up cabbage and zucchini. Use plenty of heat or it will “boil” rather than caramelize – stir often. When almost tender, add the flowers for the last 3-5 mins. Add the oyster sauce and the nuts. Serve with fresh cilantro.
